To guarantee our customers fresh and genuine products, in addition to the organic garden behind the Trattoria, we also have another hectare of land a few km from the city centre: Terra Madre Country.
The cycles of planting and harvesting are continuous. The winter vegetables that will be collected from December to February are sown in the organic garden behind the trattoria in September, whereas the vegetables that will be collected from February to April are sown in the Terra Madre Country organic garden in November. The winter production includes chickpeas, cabbage, beets, spinach, onions, broccoli, carrots, cauliflower, artichokes, and fennel.
Similarly, in the organic garden behind the restaurant, the summer vegetables that will be collected from May to July are sown in February, whereas in the Terra Madre Country organic garden, the vegetables that will be collected from August to October are sown in May. The summer production includes eggplant, peppers, green fright peppers, tomatoes, zucchini and all the spices used for cooking; thyme, rosemary, rocket, basil, sage and mint.
Between the two cycles, the land rests for about 1 Month, then the compost is added to start the classic cycle which comprises plowing, planting, watering, weeding, organic control and collection; the same processes by which our menu are named
